If there is one product that is hard to find without additives, it's tortillas / wraps.

I have managed to find literally two ingredient tortillas, so I had to get my Mexican on 🌮

These tacos are just 313 calories each, high in protein and healthy fats! Perfect for a light, easy dinner. They’re so fresh & don’t leave you feeling heavy or sluggish.

Bonus is you can add any ingredients you like to this.. though keeping in mind you still have to somewhat fold them 😉

Ingredients:

  • 250g fresh barramundi fillet
  • 2 x corn tortilla (I use Taco Manana)
  • 1.5 tbsp mayo (I use Gevity Total Tummy Tumeric Mayo)
  • 2 tsp tomato chutney (I use Beerenberg)
  • Half medium sized cucumber
  • Approx. 6 x cherry tomatoes, halved
  • 50g baby spinach
  • 100g classic coleslaw (pre-packaged)

Method:

  1. Spray pan with olive oil & cook barramundi until white & flakey 
  2. Warm corn tortillas in microwave or oven
  3. Once barramundi is cooked, cut into 1cm pieces 
  4. Build tacos as you desire & enjoy!

Servings = 2 tacos (one person)
