Caprese Pasta Salad

This is one of my favs!
It's a ridiculously delicious take on a caprese salad and requires barely any cooking. I added left over chicken we had, but you can add any sort of other meat or just go vego.
The macros don’t include the chicken I added, so they’ll be a bit higher if you add meat. Good for protein though.
Ingredients:
- 2 x 200g punnet cherry tomatoes, halved
- 1x tub cherry bocconcini, halved
- 500g pack of large spiral pasta
- Fresh basil, roughly chopped (use as much as desired)
- 3 x cups rocket & spinach
- 45g pine nuts, toasted
- Choice of meat (optional)
Dressing:
- 2 tbsp dijon mustard
- 1 tbsp extra virgin olive oil
- 1 tsp rice wine vinegar
- 1.5 tsp honey or raw sugar
Method:
- Cook pasta as per packet instructions
- Place rocket and spinach in serving bowl
- Once pasta has cooled, add to bowl
- If using, add choice of meat (optional)
- Add tomatoes & bocconcini
- Sprinkle over pine nuts & basil
- Drizzle over dressing
